I'm a sucker for mini desserts—they're friggin' adorable! Make it mini and you make it a winner. Fact: Every guest will ooh and ahh over mini anything, so just do it already. If you love ice cream sandwiches, you'll go insane for these (yes, mini) ice cream cakes. They take only a few minutes to prep, and all you need are four ingredients: ice cream, cake—shortcut alert: use store-bought pound cake—chocolate syrup or melted chocolate, and a garnish, like fruit, sprinkles, crushed cookies, or chopped nuts. Plus a biscuit or cookie cutter to form the cute rounds.

When you cut out the cake holes, it's easiest to slice the cake the width you'd want, then use the cutter to make a small round. For the ice cream, buy the kind in the paper carton and cut the paper away with scissors so you're left with the ice cream block. Use a sharp knife to cut slices, then use the cutter to form rounds.

Layer one cake round, two ice cream rounds, one more cake round, then drizzle with chocolate and top with a small strawberry slice. These cookies 'n cream cakes were amazing, but a strawberry-mint combo would be a great call, too.
