Let's start with this one, because it's all of my favorite things together. But the best part? This cake is simple to make: The only baking that is required are the brownies. They're shaped into rounds, then filled with layers cake batter cookie dough. You read that right: cake batter cookie dough. (The cookie dough is eggless.) Then the whole thing is covered with ganache.

Red Velvet Ice Cream Cake
Only one word describes this cake: luxurious. Red velvet cake sandwiched around ice cream that's been whipped with red velvet cake crumbs. To top it all off: a cream cheese whipped cream and blue berries. There's zero risk of this cake melting—it won't be around long enough.

Chocolate Chip Cookie Layered Cake
This is the ultimate in cookie cakes. It's three kinds of cookies (THREE): classic chocolate chip, chocolate-chocolate chip, and Funfetti chocolate chip cookie. Then, they're each layered with vanilla buttercream. (Just FYI, Lindsay gives you nine other cookie flavor options, if any of these seem not okay to you. But, like, why?)
