We're not sure we've ever seen a better use of Swiss Rolls—and Kristan at Confessions of a Cookbook Queen gets the credit. We whole-heartedly approve of her genius transformation.

This showstopping dessert is the perfect treat a few reasons: 1) It requires NO baking. 2) It can all be made ahead of time. And 3) It's less of a recipe and more of an assembly job—the hardest part is restraining yourself from digging in immediately instead of letting it set in the fridge. (Oh, but the wait is worth it, my friend: When the filling sets, it develops an cool ice cream-like consistency without the pain of actually having to make homemade ice cream.)

But the greatest reason is in the genius of it's construction: The entire cake is encrusted in Swiss Roll slices. So the whole thing looks intricate and nearly impossible to make, but only you know that all you did was slice a bunch of Swiss Rolls. Your guests will think either think you purchased this cake at a bakery or slaved away in the kitchen...but what they don't know won't hurt them.
