Growing up, the 4th of July always felt like the middle of my summer. I remember in elementary school when the holiday came, I would start to feel like the countdown back to school would begin. In reality, the 4th of July is the pinnacle of summer, and it was just my younger self feeling the need to appreciate my limited days of summer vacation, with long days at the pool and weeks spent at cooking camp. I just graduated from college last month, so this is my first 4th of July without another school ahead of me, but I still feel the need to appreciate each summer day.

Instead, now I'll be cherishing each of the coming long, hot Seattle days, getting to do what I love. This 4th of July will be a celebration of both our country's freedom, and mine!

Of course, doing what I love entails always dreaming up a new red, white, and blue dessert for each Independence Day. This year, Seattle has been unusually hot, and in my small apartment without air conditioning, the last thing I want to do is turn on the oven!

Thankfully, a lack of oven heat does not mean a lack of delicious desserts. One of the best no-bake desserts up my sleeve is no-bake cheesecake. It comes together so quickly and easily, and the result tastes super impressive.

For this Fourth of July version, we have three different layers: white is classic vanilla cheesecake, red is strawberry cheesecake, and blue is blueberry cheesecake. They all start with the same batter, and a little strawberry jam and blueberry jam get added to the red and blue layers. Berries sprinkled between the layers adds freshness, while the layer of graham cracker crumbs adds just the right amount of crunch.

Serving them in little dishes means everyone gets their own, and who doesn't love to dig their spoon into their own cute mini cheesecake?! The recipe only makes four, so if you're feeding a crowd, be sure to double (or triple!) as necessary. Enjoy!
